Wheat, Dairy and Sugar Free Banana Pancakes!

Our awesome Full Circle Wellness intern from Texas, Julienne, sent us her amazing guilt-free Banana Pancake recipe! Enjoy!

Hello, hello!

I made these banana pancakes this morning and your wonderful trainer, Claire, messaged me asking me to share the recipe! Today I actually modified my usual easy-peasy mix with just one more ingredient and it made them so much more full – I was pleasantly surprised

 Prep time: 10   |    Cooking time: +/- 2 minutes

Ingredients

  • 1 ripe, medium-sized banana
  • 2 eggs, farm-raised if possible
  • *approximately 1/3-1/2 cup ground rolled oats
  • unrefined coconut oil for the pan
  • Toppings:
  • whatever toppings you prefer – greek yogurt, honey, nuts, cinnamon, raisins, fruit
  • Additional info:
  • *Grind your oats using a blender.
  • *I used already ground oats to measure. It might be different using whole oats.

Method:

Mash the ripe banana with a fork and mix in the eggs in a bowl. Use a blender or coffee grinder to grind up your oats into a powder. It’s okay if they don’t grind up all the way, it adds a little more texture if there are some whole pieces still mixed in. Add the ground oats to the banana and egg mixture.   Put a little coconut oil on the pan. Pour your desired pancake size and let cook. Flip. Serve.

Mine are in this photo, behind my eggs. I topped mine with a little plain greek yogurt, honey, and cinnamon.
