Healthy Oatmeal Cookies (vegan, dairy & gluten-free)

My fabulous friend Lauren has started her own online health shop – The Plantbased Pantry! Readers of our Full Circle Wellness blog will recognise some of Lauren’s fabulous, healthy recipes under her previous pseudonym – our “Part-Time Veggie” guest writer! In 2015, Lauren started writing healthy recipes at the start of her own wellness journey by exploring the connection between food and health, and it’s incredible to see her transformation from “Part-Time Veggie” to “Full-Time Vegan” and now owner of the Plantbased Pantry online shop!

As Lauren explored creating healthy plantbased recipes in South Africa, she often struggled to source certain ingredients, When she finally did, she found many of them to be unaffordable.  From there, the idea for her online shop was born! Lauren will continue to bring our Full Circle Wellness readers plantbased, nutrient-dense tasty recipes on her Plantbased Pantry blog – and you can buy most of the “special” ingredients you may need that you can’t find in stores from her affordable online shop here!

 

I am celebrating The Plantbased Pantry’s new-look website by baking one of my “go-to” recipes from Lauren – Healthy Oatmeal Cookies!
These cookies are vegan, dairy-free and can be gluten-free depending on your choice of flour!

(I am not a big baker, but a huge cookie eater and this one from the older blog post days is a firm favourite of mine! If I can bake it, so can you!)
